A great Thai treat

I love Thai food and enjoy my favorite dish every chance I get.  Fried Noodle Soup is something that Mamasan fixes for me whenever I ask her with big soleful eyes - especially when I have a cold.

Rich chicken stock - about 1 quart
rice noodles (cooked) - 2 servings
fresh herbs (lemon balm, and other aromatic herbs) about a handful total
fresh vegetables (whichever you like best) 2 good servings
cooked chicken (deboned and diced) about 1 cup
Optional:  for when you have a cold add one small chinese red pepper - two if you are really congested but look out it'll get your attention.

the amount of ingredients is variable and can be increased or decreased as you see fit.

The herbs and the veggies should be fresh and uncooked, add them to the chicken stock that should at boiling.  Take off the flame and keep the pot covered for about 10 minutes.  Add the noodles and chicken.  Stir and serve when it's cool enough to eat.

This recipe doesn't do the dish justice but I do try.  Enjoy.
